Looking for a great side to go along with your bbq or smoked meat?  Sure, you could make an amazing potato salad, coleslaw, or bbq bean dish.  But if you are in the mood to change things up and really impress with a tasty, colorful, and aromatic dish, then make up some of our Sweet and Peppered Blackened Corn.

Sweet and Peppered Blackened Corn

[b]This blackened corn dish is a great side to serve right along side your prized smoked foods! But be careful, it just might steal the show![/b]
  • 1lb bag of sweet white corn
  • 1 Red Bell Pepper
  • 1 Green Bell Pepper
  • 1 small onion
  • 1 Tbl sugar
  • 1 Tbl BBQ Rub
  • 1 lb finely chopped bacon
  1. Cook up some bacon
  2. Dice up some onions, green, red or yellow peppers
  3. Saute the onions and peppers
  4. Add the corn and mix it up
  5. Then add in the bacon
  6. Sprinkle the sugar and BBQ rub on it
  7. Add in the bacon and cook until done
